    Prepare the Chorizo

    In a skillet over medium heat, add the chorizo. Cook until browned and fully cooked, about 5-7 minutes. Remove from heat and set aside.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet, add olive oil and heat over medium heat. Pour the egg mixture into the skillet, tilting to spread evenly. Cook for about 2-3 minutes until the bottom is set.

    Add Fillings

    Once the eggs are set but still slightly runny on top, add the cooked chorizo, black beans, diced green chili, and crumbled cotija cheese on one half of the omelet.

    Fold and Serve

    Using a spatula, carefully fold the other half of the omelet over the fillings. Cook for an additional 1-2 minutes, then slide onto a plate. Serve with warm flour tortillas on the side.
