    Prepare the Sausage and Potatoes

    In a skillet over medium heat, add the pork sausage. Cook until browned and fully cooked, about 5-7 minutes. Remove from skillet and set aside. In the same skillet, add the diced fingerling potatoes and cook until tender and crispy, about 10-12 minutes. Once done, mix with the sausage.

    Make the Omelet

    In a bowl, whisk together the eggs, salt, and pepper. Add the sausage and potato mixture, along with chopped sage and half of the fontina cheese. Mix well.

    Cook the Omelet

    Heat a non-stick skillet over medium-low heat and add a little oil or butter. Pour the egg mixture into the skillet. Cook until the edges begin to set, then sprinkle the remaining fontina cheese on top. Cover and cook until the eggs are fully set, about 5-7 minutes.

    Serve

    Carefully slide the omelet onto a plate, fold it over, and garnish with additional sage if desired. Serve hot with sausage gravy on the side.
