Classic Pancake Batter

Prepare the Batter

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.

    Combine Wet Ingredients

    In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Make the Pancakes

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

    Cook Pancakes

    Pour 1/4 cup of batter onto the skillet for each pancake. If you're making variations, add your desired toppings (chocolate chips, blueberries, banana slices, etc.) to the batter before flipping.

    Flip and Finish

    Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.

Serve

    Stack three different pancakes on a plate, drizzle with maple syrup, and top with whipped cream if desired.
