Omelet Preparation

Prepare the Filling
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced onion and red bell pepper. Sauté until softened, about 3-4 minutes. Add the diced Black Forest ham and cook for another 2 minutes. Remove the skillet from heat and set aside.

Whisk the Eggs
In a mixing bowl, crack the eggs and add salt and black pepper. Whisk until well combined and slightly frothy.

Cook the Omelet
In a non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Pour in the whisked eggs, tilting the pan to ensure even coverage. Cook for 2-3 minutes until the edges begin to set.

Add the Filling
Once the eggs are mostly set, add the sautéed filling mixture evenly over one half of the omelet. Sprinkle the shredded cheddar and Monterey Jack cheese on top of the filling.

Fold and Serve
Gently fold the other half of the omelet over the filling. Cook for an additional 1-2 minutes until the cheese is melted. Carefully slide the omelet onto a plate and top with pickled chiles.
