For the Shrimp Kabobs

Prepare the Skewers
Soak wooden skewers in water for 30 minutes to prevent burning. Thread shrimp, bell peppers, and red onion onto skewers.

Cook the Rice
Add rice to the saucepan and stir for 1 minute. Pour in chicken broth and salt. Bring to a boil, then cover and simmer for 15 minutes.
For the Garden Salad

Prepare the Salad
In a large bowl, toss mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste.
For the Orange Rolls

Mix Dry Ingredients
In a bowl, whisk together flour, sugar, baking powder, and salt.

Combine Wet Ingredients
In another bowl, mix milk, orange juice, and melted butter. Gradually add to the dry ingredients and stir until just combined.

Bake the Rolls
Spoon the batter into greased muffin tins. Bake at 375°F (190°C) for 15-20 minutes, until golden.
