Marinate the Steak

In a bowl, combine lime juice, olive oil, minced garlic, salt, and pepper. Add the flank steak, ensuring it's fully coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Cook the Steak

Preheat a grill or stovetop grill pan over medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes per side, or until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.

Caramelize the Onions and Peppers

In a skillet over medium heat, add a tablespoon of olive oil. Slice the onion and bell peppers, and sauté them in the skillet until they are soft and caramelized, about 10-15 minutes.

Assemble the Sandwiches

Slice the French rolls in half and lightly toast them if desired. Layer the sliced steak, caramelized onions, and peppers on the bottom half of each roll. Top with a slice of pepper jack cheese and a generous spread of aioli before closing the sandwich.

Cut the sandwiches in half and serve warm with your favorite sides.
