Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Marinate
Place the calamari in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 30 minutes.

Mix the Breading
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

Heat the Oil
In a deep frying pan or pot, heat oil to 375°F (190°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture until well coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden and crispy.

Drain and Serve
Remove the fried calamari with a slotted spoon and place on paper towels to drain excess oil. Serve immediately with your favorite dipping sauce.
