    Prepare the Milk

    In a large pot, heat the whole milk over medium heat until it reaches 190°F (88°C). Stir gently to prevent scorching.

    Add Vinegar

    Remove the pot from heat and add the white vinegar. Stir gently for about 1 minute. Let the mixture sit for about 5 minutes to allow curds to form.

    Add Rennet

    Dissolve the rennet tablet in 1 cup of water and add it to the milk mixture. Stir gently for about 30 seconds. Cover the pot and let it sit undisturbed for 15 minutes.

    Cut the Curds

    After 15 minutes, the curds should have formed. Using a knife, cut the curds into 1-inch cubes. Let them rest for another 5 minutes.

    Cook the Curds

    Gently heat the curds over low heat, stirring occasionally, until they reach a temperature of 105°F (40°C). This should take about 15-20 minutes.

    Drain the Curds

    Once the curds are cooked, pour the mixture into a colander lined with cheesecloth to drain off the whey. Rinse the curds under cold water.

    Season the Curds

    Transfer the curds to a bowl and sprinkle with salt. Mix gently to incorporate. Let the curds sit for about 10 minutes to allow the flavors to meld.

    Enjoy the cheese curds fresh or store them in an airtight container in the refrigerator for up to a week.
