Taco Filling
Method
Preparation
Prepare the Avocados
Cut the avocados in half, remove the pit, and scoop out the flesh. Slice each half into wedges.
Make the Batter
In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. Gradually add the cold water, mixing until you have a smooth batter.
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot.
Fry the Avocados
Dip each avocado wedge into the batter, allowing the excess to drip off. Carefully place them into the hot oil, frying in batches until golden and crispy, about 2-3 minutes per side.
Drain and Serve
Remove the fried avocado from the oil and place on paper towels to drain excess oil. Serve hot in taco shells with your choice of toppings.
