Peel the russet potatoes and cut them into thin fry strips, about 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch, then pat them dry with paper towels.

In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil temperature by dropping in a small piece of potato; it should sizzle immediately.

Carefully add the fries in small batches to the hot oil. Fry them for about 5-7 minutes, or until they are golden brown and crispy. Make sure not to overcrowd the pot.

Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt, paprika, cayenne pepper, oregano, and garlic powder to taste.
