    Baba Ganoush Preparation

    2. In a food processor, combine the roasted eggplant, tahini, garlic, lemon juice, olive oil, salt, and cumin. Blend until smooth. Adjust seasoning if necessary.

    Falafel Preparation

    3. In a bowl, mash the chickpeas with a fork. Add chopped parsley, cumin, salt, and mix well. Form into balls or patties.

    Fry the Falafel

    4. Heat oil in a frying pan over medium heat. Fry the falafel for about 3-4 minutes on each side until golden brown. Drain on paper towels.

    Cigar Borek Preparation

    5. In a skillet, sauté spinach until wilted. Mix in crumbled feta and cinnamon, then set aside.

    Assemble Cigar Borek

    6. Take a sheet of phyllo dough, brush with oil, and place a spoonful of the spinach-feta mixture at one end. Roll tightly and seal the edges. Repeat for the remaining mixture.

    Fry the Cigar Borek

    7. Fry the borek in hot oil until golden brown on both sides, about 2-3 minutes. Drain on paper towels.

    Serve the Sampler

    8. Serve the baba ganoush with pita bread, along with the three falafel and three cigar borek on a platter.
