Soak the Chickpeas
In a bowl, soak the dried chickpeas in water for at least 8 hours or overnight.

Make the Falafel Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, garlic, red onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Process until a coarse mixture forms.

Form the Falafel Balls
Shape the mixture into small balls or patties, about 1-2 inches in diameter.

Fry the Falafel
Heat oil in a deep frying pan over medium heat. Fry the falafel in batches until golden brown and crisp, about 3-4 minutes per side. Drain on paper towels.

Assemble the Wrap
Warm the pita bread slightly. Place lettuce, red cabbage, and falafel inside each pita. Drizzle with tomato sauce and serve.
