Soak Chickpeas
Place dried chickpeas in a bowl and cover with water. Let soak overnight or for at least 8 hours.

Blend Ingredients
Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms. If the mixture is too dry, add a little water. If it's too wet, add flour as needed.

Shape Falafel
Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry Falafel
Carefully drop the falafel balls into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-5 minutes per side. Remove and drain on paper towels.

Serve
Serve hot with pita bread, tahini sauce, or your favorite salad.
