    Prepare the Filling

    In a bowl, combine feta cheese, ricotta cheese, chopped parsley, salt, black pepper, and beaten egg. Mix well until smooth. Set aside.

    Prepare the Phyllo Dough

    Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Take one sheet of phyllo and brush lightly with olive oil. Place another sheet on top and brush with olive oil again.

    Fill and Roll

    Place a tablespoon of the cheese filling at one end of the phyllo sheets. Roll tightly like a cigar, sealing the ends by folding them inward to prevent the filling from escaping.

    Fry the Borek

    In a deep frying pan, heat vegetable oil over medium heat. Once hot, fry the rolled borek until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.
