Baklava Preparation

    Prepare the Filling

    In a bowl, combine the finely chopped pistachios and ground cinnamon. Set aside.

    Layer the Phyllo

    Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish. Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Place one sheet of phyllo in the baking dish and brush with melted butter. Repeat this process, layering 8 sheets of phyllo, brushing each with butter.

    Add the Filling

    Spread a thin layer of the pistachio mixture over the phyllo. Layer 2 more sheets of phyllo, brushing each with butter. Repeat the filling and phyllo layering until all the filling is used, ending with a top layer of 8 phyllo sheets, each brushed with butter.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, cutting through all layers.

    Bake

    Bake in the preheated oven for about 45-50 minutes, or until golden brown and crisp.

    Prepare the Syrup

    While the baklava is baking, combine water, sugar, honey, and vanilla extract in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer for about 10 minutes. Remove from heat and let cool.

    Finish the Baklava

    Once the baklava is baked, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to soak for several hours or overnight before serving.
