Prepare the Chicken
Cut the boneless chicken thighs into bite-sized pieces and set aside.

Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.

Batter the Chicken
In another bowl, whisk together the eggs and buttermilk. Dip each piece of chicken into the egg mixture, then coat with the flour mixture. Ensure each piece is well coated.

Fry the Chicken
In a deep fryer or large pot, heat oil to 375°F (190°C). Fry the coated chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Toss in Sauce
In a large bowl, toss the fried chicken pieces with your choice of hot sauce until well coated.

Serve the spicy boneless wings with celery sticks on the side.
