1. Prepare the Ribs

Remove the membrane from the back of the ribs and trim any excess fat. Rinse the ribs under cold water and pat dry with paper towels.

2. Make the Rub

In a bowl, mix together brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper to create the dry rub.

3. Season the Ribs

Generously apply the dry rub all over the ribs, ensuring they are well coated. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight.

4. Prepare the Smoker

Soak wood chips in water for at least 30 minutes. Preheat your smoker to 110°C (225°F) and add the soaked wood chips.

5. Smoke the Ribs

Place the ribs in the smoker bone-side down. Smoke the ribs for about 5-6 hours, maintaining a consistent temperature and adding more wood chips as needed.

6. Baste the Ribs

In a bowl, mix apple cider vinegar and water. Every hour, baste the ribs with this mixture to keep them moist.

7. Check for Doneness

The ribs are done when they are tender and the meat pulls away from the bones easily. You can also use a meat thermometer; they should reach an internal temperature of 90°C (195°F).

8. Rest and Serve

Once done, remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve with your favorite barbecue sauce.
