Preparation and Cooking

    Prepare the Sausages

    In a bowl, mix the pork sausage with garlic powder, paprika, cayenne pepper, black pepper, and salt until well combined. Form the mixture into links or keep them as they are if they're pre-made.

    Preheat the Smoker

    Soak the smoked wood chips in water for about 30 minutes. Preheat your smoker to 225°F (107°C). Once the smoker is ready, drain the wood chips and place them in the smoker.

    Smoke the Sausages

    Place the sausages in the smoker, making sure they are not touching each other. Smoke the sausages for about 2 to 3 hours or until they reach an internal temperature of 160°F (71°C).

    Finish and Serve

    Once the sausages are done, remove them from the smoker and let them rest for a few minutes. Brush them with olive oil and a splash of apple cider vinegar before serving. Enjoy your hot link smoked sausage!
