Prepare the Pork
Trim excess fat from the pork shoulder and pat dry with paper towels.

In a bowl, combine kosher salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Mix well.

Rub the spice mixture all over the pork shoulder, ensuring even coverage. Wrap in plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Soak wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).
