Prepare the Pork
In a bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the pork shoulder. Place the pork in a slow cooker along with apple cider vinegar and barbecue sauce. Cook on low for 8 hours or until the pork is tender and easily shredded.

Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, sugar, and pepper. Pour the dressing over the cabbage mixture and toss until well combined.

Assemble the Sandwiches
Once the pork is cooked, shred it using two forks. Toast the burger buns if desired. Layer the pulled pork on the bottom half of each bun, top with coleslaw, and sprinkle fried shallots on top. Place the top half of the bun over the fillings.
