    Prepare the Beets

    Begin by washing the fresh beets thoroughly under running water. Trim the tops and roots, then place them in a pot of boiling water. Cook for about 30-40 minutes or until tender when pierced with a fork.

    Make the Pickling Liquid

    In a separate saucepan, combine white vinegar, water, sugar, salt, and black peppercorns. Bring to a boil, stirring until the sugar and salt dissolve.

    Peel and Slice the Beets

    Once cooked, drain the beets and allow them to cool slightly. Peel the skins off while they are still warm, then slice them into rounds or cubes.

    In a large jar or bowl, layer the sliced beets, garlic cloves, and fresh basil leaves. Pour the hot pickling liquid over the beets until fully submerged.
