    Char the Jalapenos

    Preheat a grill or a cast-iron skillet over medium-high heat. Toss the jalapeno peppers in olive oil and place them on the grill or skillet. Cook until the skin is blistered and charred, about 5-7 minutes, turning occasionally. Remove from heat and let them cool.

    Prepare the Pickling Brine

    In a saucepan, combine white vinegar, water, sugar, salt, garlic cloves, black peppercorns, coriander seeds, and oregano. Bring to a boil over medium heat, stirring until the sugar and salt dissolve. Remove from heat and let cool for about 10 minutes.

    Pickle the Jalapenos

    Once the jalapenos have cooled, slice them into rings and place them in a clean glass jar. Pour the cooled pickling brine over the jalapenos, ensuring they are fully submerged. Seal the jar and refrigerate for at least 24 hours before using for optimal flavor.
