    Prepare the Beans

    Rinse the dried navy beans under cold water. Place them in a large pot and cover with water. Soak the beans overnight or for at least 8 hours. Drain and rinse again.

    Cook the Beans

    In a large pot, add the soaked beans and 6 cups of fresh water. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender. Drain and set aside.

    Sauté Vegetables

    In the same pot, sauté the chopped onion, bell pepper, and minced garlic over medium heat until the vegetables are soft, about 5-7 minutes.

    Mix the Ingredients

    Add the cooked beans back to the pot. Stir in the ketchup, brown sugar, mustard, liquid smoke, salt, and black pepper. Mix well to combine.

    Bake the Beans

    Preheat the oven to 350°F (175°C). Transfer the bean mixture to a baking dish. Cover with foil and bake for 1 hour. Remove the foil and bake for an additional 30 minutes until the sauce is bubbly and thickened.
