    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch and pat them dry with a paper towel.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature.

    Fry the Potatoes

    Carefully add a handful of the cut fries to the hot oil, being cautious not to overcrowd the pot. Fry them for about 5-7 minutes, or until golden brown and crispy. Remove them using a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle them with salt, black pepper, and garlic powder to taste. Toss gently to ensure even coating.
