Prepare Ginger Syrup

In a saucepan, combine water, fresh ginger (peeled and chopped), and sugar. Bring to a boil over medium heat, stirring until the sugar has dissolved. Reduce heat and let simmer for about 10 minutes. Remove from heat and let cool.

Strain the Syrup

Once the ginger syrup has cooled, strain it through a fine mesh sieve to remove the ginger pieces. Set the syrup aside.

Mix the Drink

In a large pitcher, combine the ginger syrup, lemon juice, and lime juice. Stir well to combine.

Add Sparkling Water

Just before serving, add the sparkling water to the pitcher and stir gently to combine.

Garnish and Serve

Pour the ginger beer into glasses filled with ice. Garnish with fresh mint leaves and serve immediately.
