Prepare the filling
In a bowl, mix the ricotta cheese, salt, and black pepper until well combined. Set aside.

Stuff the blossoms
Gently open each zucchini blossom and stuff with about 1-2 tablespoons of the ricotta mixture. Carefully twist the petals to close.

Prepare the batter
In a separate bowl, combine flour and salt. Gradually whisk in cold sparkling water until the batter is smooth and slightly thick.

Fry the blossoms
Dip each stuffed zucchini blossom into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for 2-3 minutes, or until golden brown and crispy.

Drain and serve
Remove the fried blossoms from the oil and drain on paper towels. Serve warm with chopped heirloom tomatoes and Cantabrico anchovies on top.
