Method
Cooking the Cornish Hen

Preheat the Oven
Preheat the oven to 400°F (200°C).

Season the Hen
Pat the Cornish hen dry with paper towels. Rub olive oil all over the hen and season with salt, black pepper, and thyme.

Roast the Hen
Place the hen in a roasting pan and roast for about 50-60 minutes or until the internal temperature reaches 165°F (74°C).
Making the Pomme Purée

Boil the Potatoes
Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth. Season with salt to taste.

Making the Foie Gras Sauce

Sauté Shallots
Sauté chopped shallots in butter until soft, about 3 minutes.

Deglaze
Deglaze the pan with white wine, scraping up any bits. Reduce by half.

Finish the Sauce
Add chicken stock and foie gras. Stir until melted and the sauce thickens. Season with salt if needed.
