Prepare the Ingredients
In a cocktail shaker, combine the sliced strawberries and chopped tarragon. Muddle them together gently to release the flavors.

Mix the Cocktail
Add the Plantation 3 Étoiles rum, fresh lime juice, and simple syrup to the shaker. Fill the shaker with ice cubes and shake well until chilled (about 15 seconds).

Strain and Serve
Strain the mixture into a chilled cocktail glass. If desired, fine strain to remove bits of strawberry and tarragon.

Garnish
Garnish with a lime wheel and a fresh sprig of tarragon on top.
