Coxinhas de Frango
Method
Preparation of Coxinhas de Frango
- 1
Cook the Chicken
In a pot, add chicken breast, cover with water, and add salt. Boil for about 20 minutes until cooked. Shred the chicken and set aside.
- 2
Make the Filling
In a pan, melt some butter over medium heat. Add the finely chopped onion and minced garlic, sauté until translucent. Add the shredded chicken and cream cheese. Mix well and cook for an additional 5 minutes. Set aside to cool.
- 3
Prepare the Dough
In another pot, melt the remaining butter and add the chicken broth. Bring to a boil. Gradually add the all-purpose flour, stirring continuously until the mixture forms a ball. Remove from heat and let it cool slightly.
- 4
Shape the Coxinhas
Once the dough is cool enough to handle, take a small piece and flatten it in your palm. Place a spoonful of the chicken filling in the center and fold the dough over, shaping it into a teardrop form. Repeat with remaining dough and filling.
