    Marinate the Beef

    In a large bowl, combine the olive oil, red wine vinegar, minced garlic, rosemary, thyme, smoked paprika, salt, and black pepper. Mix well. Add the beef brisket to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 4 hours or overnight for best results.

    Prepare the Cooking Dish

    Preheat the oven to 300°F (150°C). In a large roasting pan, place the sliced onion at the bottom and pour in the beef broth.

    Roast the Beef

    Remove the brisket from the marinade and place it on top of the onions in the roasting pan. Pour any remaining marinade over the beef. Cover the pan tightly with aluminum foil and roast in the preheated oven for about 3 to 4 hours, or until the brisket is tender and easily pulls apart with a fork.

    Rest and Serve

    Once cooked, remove the brisket from the oven and let it rest for at least 15 minutes before slicing. Serve warm with the onions and drizzled with pan juices.
