1. Prepare the Steak
Remove the New York strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.
2. Season the Steak
Pat the steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt, black pepper, and garlic powder.
3. Heat the Pan
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add the remaining olive oil.
4. Cook the Steak
Add the steaks to the hot pan and sear for about 4-5 minutes on one side without moving them. Flip the steaks and add butter and rosemary to the pan.
5. Baste the Steak
Using a spoon, baste the steaks with the melted butter and rosemary for an additional 4-5 minutes for medium-rare, or until your desired doneness.
6. Rest the Steak
Remove the steaks from the pan and let them rest on a cutting board for at least 5 minutes before slicing.
7. Serve
Slice the steak against the grain and serve immediately.
