Prepare the Meat
Cut the pork shoulder and beef chuck into small chunks. Place them in a large mixing bowl.

Mix the Ingredients
Add the minced garlic, paprika, cayenne pepper, salt, black pepper, and red wine vinegar to the bowl. Mix thoroughly until the spices are evenly distributed.

Grind the Mixture
Using a meat grinder or food processor, grind the mixture until it reaches a coarse consistency.

Prepare the Casings
Rinse the pork casings under cold water and soak them in water for about 30 minutes to soften.

Stuff the Sausages
Stuff the sausage mixture into the casings using a sausage stuffer, being careful not to overstuff. Tie off the ends with kitchen twine.
