Preparation Steps

  1. 1

    Prepare the Meat

Cut the pork shoulder and beef chuck into small chunks. Place them in a large mixing bowl.

  2. 2

    Mix the Ingredients

Add the minced garlic, paprika, cayenne pepper, salt, black pepper, and red wine vinegar to the bowl. Mix thoroughly until the spices are evenly distributed.

  3. 3

    Grind the Mixture

Using a meat grinder or food processor, grind the mixture until it reaches a coarse consistency.

  4. 4

    Prepare the Casings

Rinse the pork casings under cold water and soak them in water for about 30 minutes to soften.

  5. 5

    Stuff the Sausages

Stuff the sausage mixture into the casings using a sausage stuffer, being careful not to overstuff. Tie off the ends with kitchen twine.

  6. 6

    Cook the Sausages

Grill, pan-fry, or bake the sausages over medium heat until cooked through and browned, about 20-25 minutes.

  7. 7

    Serve

Slice and serve the linguiça hot with your favorite sides.
