Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, sour cream, eggs, vanilla extract, and lemon juice. Mix until fully combined and smooth.

Bake
Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let cool to room temperature.

Chill
Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for the best texture.

Prepare the brûlée topping
Before serving, sprinkle a thin, even layer of granulated sugar on top of the cheesecake. Use a kitchen torch to caramelize the sugar until it forms a crispy top. If you don't have a torch, you can place the cheesecake under the broiler for a few minutes, watching closely to avoid burning.
