In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Kneading the Dough
Mix the ingredients using a wooden spoon until a rough dough forms. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

Letting the Dough Rise
Place the kneaded dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.

Preheat your oven to 475°F (245°C) and place a baking stone or an upside-down baking sheet inside to heat up.

Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball.

On a lightly floured surface, roll each ball into a circle about ¼ inch thick. Make sure they are not too thick, or they won’t puff up.

Carefully place the rolled-out pitas on the preheated baking stone or sheet and bake for 5-7 minutes or until they puff up and turn lightly golden.
