Cooking Pasta
- 1
Boil the Pasta
Fill a large pot with water, add a pinch of salt, and bring it to a boil. Once boiling, add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- 2
Drain Pasta
Once the pasta is cooked, drain it in a colander and set aside. Do not rinse.
Preparing Vegetables
- 3
Chop the Vegetables
While the pasta is cooking, wash and chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and prepare the broccoli florets.
- 4
Sauté the Vegetables
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Then, add the chopped vegetables and sauté for about 5-7 minutes, or until they are tender but still crisp.
Combining Ingredients
- 5
Mix Everything Together
Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine, then season with salt, black pepper, and mix in the grated Parmesan cheese and chopped basil.
- 6
Serve
Serve hot, garnished with additional Parmesan cheese and basil if desired.
