Prepare the Burrito Filling

    Scramble the Eggs

    In a medium bowl, crack the large eggs and whisk them together with salt and black pepper until well combined. In a non-stick skillet, heat olive oil over medium heat. Pour the eggs into the skillet and cook, stirring gently, until they are fully scrambled and no longer runny, about 3-4 minutes.

    Add Black Beans and Cheese

    Once the eggs are scrambled, gently fold in the drained black beans and shredded Monterey Jack cheese. Cook for an additional 1-2 minutes until the cheese is melted and everything is heated through. Remove the skillet from heat.

Assemble the Burritos

    Place a large flour tortilla on a clean surface. Spoon about 1/4 of the egg mixture into the center of the tortilla.
