Grilled Cheese Sandwich

    Prepare the Bread and Cheese

    Take two slices of bread and place a slice of cheese between them.

    Butter the Bread

    Spread butter evenly on the outside of both slices of bread.

    Grill the Sandwich

    Heat a non-stick skillet over medium heat. Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes. Flip the sandwich and grill the other side until the cheese is melted and the bread is golden brown, about another 3-4 minutes.

Tomato Soup

    Sauté Onion and Garlic

    In a saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute.

    Add Tomatoes and Broth

    Pour in the canned diced tomatoes (with juices) and vegetable broth. Stir to combine.

    Simmer the Soup

    Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes. Season with salt and pepper to taste.

    Blend the Soup (Optional)

    For a smoother texture, use an immersion blender to puree the soup until smooth. You can also leave it chunky if preferred.

    Serve the Soup

    Ladle the tomato soup into bowls and garnish with basil or parsley if desired.
