Grilled Cheese Sandwich

Prepare the Bread and Cheese
Take two slices of bread and place a slice of cheese between them.

Butter the Bread
Spread butter evenly on the outside of both slices of bread.

Grill the Sandwich
Heat a non-stick skillet over medium heat. Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes. Flip the sandwich and grill the other side until the cheese is melted and the bread is golden brown, about another 3-4 minutes.

Add Tomatoes and Broth
Pour in the canned diced tomatoes (with juices) and vegetable broth. Stir to combine.

Simmer the Soup
Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes. Season with salt and pepper to taste.

Blend the Soup (Optional)
For a smoother texture, use an immersion blender to puree the soup until smooth. You can also leave it chunky if preferred.
