Preparing the Hollandaise Sauce

Melt Butter
In a small saucepan, melt the butter over low heat until just melted. Remove from heat and set aside.

Season the Sauce
Add salt and a pinch of cayenne pepper to taste. Remove from heat and cover to keep warm.
Poaching the Eggs

Crack Eggs
Crack each egg into a small bowl or ramekin. This will make it easier to slide them into the water.

Poach Eggs
Gently slide each egg into the simmering water. Cook for about 3-4 minutes for a runny yolk or longer if you prefer firmer yolks.

Toast Muffins
Split the English muffins in half and toast them until golden brown.

Cook Canadian Bacon
In a skillet over medium heat, cook the Canadian bacon for about 1-2 minutes on each side until heated through.

On each toasted half of the English muffin, place a slice of Canadian bacon followed by a poached egg.

Spoon the warm hollandaise sauce generously over each egg.
