Preparing the Hollandaise Sauce

    Melt Butter

    In a small saucepan, melt the butter over low heat until just melted. Remove from heat and set aside.

    Whisk Egg Yolks

    In a stainless steel or glass bowl, whisk together the egg yolks and lemon juice until light and frothy.

    Heat Mixture

    Place the bowl over a pot of simmering water (double boiler method) and continue whisking while slowly adding the melted butter. Whisk until the sauce is thick and creamy.

    Season the Sauce

    Add salt and a pinch of cayenne pepper to taste. Remove from heat and cover to keep warm.

Poaching the Eggs

    Prepare Water

    In a large saucepan, bring 6 cups of water to a gentle simmer. You may add a splash of vinegar to help the eggs hold their shape.

    Crack Eggs

    Crack each egg into a small bowl or ramekin. This will make it easier to slide them into the water.

    Poach Eggs

    Gently slide each egg into the simmering water. Cook for about 3-4 minutes for a runny yolk or longer if you prefer firmer yolks.

    Using a slotted spoon, carefully remove the poached eggs and place them on a paper towel to drain.

Assembling the Eggs Benedict

    Split the English muffins in half and toast them until golden brown.

    In a skillet over medium heat, cook the Canadian bacon for about 1-2 minutes on each side until heated through.

    On each toasted half of the English muffin, place a slice of Canadian bacon followed by a poached egg.
