Method

Cooking the Rice

  1. 1

    Rinse the Rice

In a fine-mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.

  3. 3

    Fluff the Rice

Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. Then, fluff the rice with a fork to separate the grains.

Preparing the Cilantro Mixture

  1. 4

    Mix the Ingredients

In a large bowl, combine the chopped cilantro, lime juice, olive oil, minced garlic, and chopped green onion. Stir until well mixed.

  2. 5

    Season the Mixture

Add the black pepper and cumin to the cilantro mixture. Stir well to ensure the spices are evenly distributed.

Combining Everything

  1. 6

    Combine Rice and Cilantro Mixture

Once the rice is cooked and fluffed, add it to the cilantro mixture. Gently fold the rice into the mixture until it is well combined, being careful not to mash the rice.

  2. 7

    Serve

Transfer the cilantro rice to a serving dish and garnish with additional cilantro if desired. Enjoy as a side dish or as a base for your favorite protein.
