Marinate the Tuna

In a shallow dish, combine the soy sauce, mirin, and sesame oil. Add the fresh tuna loin, making sure it's fully submerged. Cover and refrigerate for at least 30 minutes.

Prepare the Garnishes

While the tuna is marinating, toast the sesame seeds in a dry skillet over medium heat until golden and fragrant. Chop the green onions finely.

Sear the Tuna

Remove the tuna from the marinade and pat dry with paper towels. Heat a skillet over high heat and add a little oil. Sear the tuna for about 30 seconds on each side, just enough to create a crust while keeping the center rare. Let it rest for a few minutes before slicing.

Serving

Plate the Tuna

Slice the tuna loin into thin sashimi-style pieces. Arrange on a plate, sprinkle with toasted sesame seeds and chopped green onions, and garnish with microgreens. Serve with wasabi on the side.
