Prepare the Cucumber

Using a vegetable peeler, peel the cucumber and then slice it into long, thin strips.

Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork, then mix in the rice vinegar, salt, and black pepper.

Assemble the Roll

Lay a nori sheet on a bamboo sushi mat or a clean surface. Spread a thin layer of the mashed avocado mixture across the nori, leaving a small border at the top. Lay a few strips of cucumber horizontally on the avocado.

Starting from the bottom, carefully roll the sushi away from you, using the mat to help keep the roll tight. Moisten the top edge of the nori with a little water to help seal the roll.
