    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rice and water, bring to a boil, then reduce heat to low and cover. Cook for 20 minutes or until water is absorbed. Remove from heat and let sit, covered, for another 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Fillings

    Slice the fresh Albacore tuna into thin strips. Julienne the cucumber and slice the avocado.

    Assemble the Rolls

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down. Wet your hands and grab a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top. Lay strips of tuna, cucumber, and avocado across the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Moisten the top border of the nori with a little water to seal the roll.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
