    Prepare the Egg Mixture

    In a mixing bowl, crack the eggs and whisk them together with soy sauce, mirin, sugar, and a pinch of salt until well combined.

    Heat the Pan

    Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil, swirling to coat the bottom of the pan.

    Cook the First Layer

    Pour a small amount of the egg mixture into the pan, just enough to cover the bottom. Let it cook until the edges start to set, about 1-2 minutes.

    Roll the Omelet

    Using chopsticks or a spatula, start rolling the omelet from one end to the other. Push the rolled omelet to one side of the pan.

    Add More Egg Mixture

    Add another tablespoon of oil if necessary, then pour more egg mixture into the pan, lifting the rolled omelet so the liquid can flow underneath.

    Repeat Cooking Process

    Let this layer cook until it sets, then roll the previous omelet over it again. Repeat this process until all the egg mixture is used up.

    Final Touch

    Once cooked, remove the omelet from the pan and let it cool slightly. If using, sprinkle chopped green onions on top.

    Slice and Serve

    Slice the Tamago into thick pieces and serve warm or at room temperature.
