Directions for Making Spicy Scallop Roll
1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt into the warm rice and let it cool.
2. Prepare the Filling
In a bowl, combine the fresh scallops, mayonnaise, and chili paste. Mix until scallops are well coated and set aside.
3. Prepare the Cucumber
Julienne the cucumber into thin strips.
4. Assemble the Roll
Lay a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top. Place a line of the scallop mixture and a few cucumber strips along the bottom edge of the rice.
5. Roll the Sushi
Using the bamboo mat, carefully roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
6. Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and top with masago if desired. Serve with soy sauce and wasabi.
