Prepare the Tuna
Heat sesame oil in a skillet over medium-high heat. Sear the tuna for about 1-2 minutes on each side until the outside is browned but the inside remains rare. Remove from heat and let it rest.

Prepare the Filling
Finely chop the green onions and garlic. Mix them in a bowl and set aside.

Assemble the Roll
Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Place a few slices of seared tuna and a spoonful of the green onion and garlic mixture along the bottom edge of the rice.

Roll It Up
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep the roll tight. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.

Serve
Arrange the sushi rolls on a plate, serve with soy sauce, wasabi, and pickled ginger on the side.
