Method

Prepare the Seafood

  1. 1

Pat the shrimp, squid, and fish dry with paper towels. Set aside.

Make the Tempura Batter

  1. 2

    Mix the Dry Ingredients

In a bowl, combine the all-purpose flour, cornstarch, and baking powder.

  2. 3

    Add Wet Ingredients

In another bowl, whisk together the cold water and beaten egg. Then, gently mix this with the dry ingredients until just combined (batter should be slightly lumpy).

Fry the Seafood

  1. 4

Heat the vegetable oil in a deep pan or fryer to 180°C (350°F).

  2. 5

Dip each piece of seafood into the tempura batter, allowing excess batter to drip off.

  3. 6

Carefully place the battered seafood in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes.

  4. 7

Remove the tempura from the oil and drain on paper towels.

Prepare the Dipping Sauce

  1. 8

In a small bowl, mix together soy sauce, mirin, and grated daikon radish.

Serve

  1. 9

Serve the seafood tempura hot, accompanied by the dipping sauce.
