Prepare Sushi Rice

Cook Sushi Rice

Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the rice cooker instructions.

Season Sushi Rice

In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Once rice is cooked, transfer to a bowl and gently fold in the vinegar mixture. Let cool.

Assemble California Roll

Prepare Fillings

Slice the avocado and cucumber into thin strips. Cut the imitation crab meat into smaller pieces.

Roll Sushi

Place a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange avocado, cucumber, and crab meat in a line across the rice. Roll tightly from the bottom to the top, sealing the edge with a little water.

Cook Teriyaki Shrimp

Cook Shrimp and Peppers

In a skillet over medium heat, add the shrimp and teriyaki sauce. Cook for about 3-4 minutes until shrimp are pink. Add sliced bell peppers and cook for an additional 2-3 minutes until tender.

Top the Roll

Slice the prepared California roll into bite-sized pieces. Top with teriyaki shrimp and peppers. Sprinkle sesame seeds over the top and serve with additional teriyaki sauce, if desired.
