Prepare Sushi Rice

Cook the Rice

Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice

Once cooked, let the rice cool slightly. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the rice. Set aside to cool completely.

Prepare Shrimp Filling

Cook the Shrimp

In a pan over medium heat, cook the shrimp until they are pink and opaque, about 3-4 minutes. Remove from heat and let cool.

Mix with Spicy Mayo

Toss the cooked shrimp with spicy mayo until well coated.

Assemble the Roll

Prepare the Rolling Station

Lay a bamboo sushi mat on a flat surface. Place a sheet of nori on the mat, shiny side down.

Add Ingredients

Wet your hands with water to prevent sticking. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Add a line of the shrimp mixture, cucumber, and avocado slices across the center.

Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Wet the top edge of the nori to seal the roll.

Cut and Plate

Using a sharp knife, slice the roll into 6-8 pieces. Top each piece with a prawn and sprinkle with sesame seeds. Serve immediately.
