Prepare Sushi Rice

    Rinse the Rice

    Rinse sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Combine rinsed sushi rice and water in a rice cooker. Cook according to the rice cooker's instructions.

    Season the Rice

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat until dissolved. Once the rice is cooked, transfer it to a bowl and fold in the vinegar mixture. Let it cool.

Prepare Fillings

    Slice Fillings

    While the rice is cooling, slice the fresh tuna, salmon, snapper, and avocado. Prepare the cooked prawns and make a thin omelette, then slice it.

Assemble Rainbow Rolls

    Lay Nori

    Place a nori sheet shiny side down on a bamboo sushi mat.

    Add Rice

    Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top.

    Layer Fillings

    Arrange a line of tuna, salmon, prawn, snapper, omelette, and avocado across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

    Cut the Roll

    Using a sharp knife, cut the roll into 6 to 8 pieces, wiping the knife with a damp cloth between cuts.

    Serve the rainbow rolls on a plate with soy sauce, pickled ginger, and wasabi on the side.
