Method

Prepare Sushi Rice

  1. 1

    Rinse and Cook Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

  2. 2

    Season the Rice

Once the rice is cooked, transfer it to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the warm rice. Allow it to cool to room temperature.

Prepare the Fish

  1. 3

    Slice the Fish

Using a sharp knife, slice the fresh tuna and salmon into thin sashimi slices, about 1/4 inch thick.

Assemble

  1. 4

    Serve

On a plate, arrange the sushi rice and place the sliced tuna and salmon on top. Serve with soy sauce, wasabi, and pickled ginger on the side.
